A BEAUTIFUL message from our beautiful 5.3.13 bride:

"From our initial point of contact through after our wedding, we have been so impressed by the attention to detail, willingness to help, and sincere nature that Lars and Anne (owners) and Emily (coordinator) exhibit. They truly want to go above and beyond to make your day as perfect as possible. Their passion for doing this shines through the minute you step onto the grounds. The lawn is beautiful manicured with flowers and greens and they are continuously improving, not that they needed to because it was fabulous to begin with. Not only do they offer a beautiful location, but they open their gorgeous home to you to use to get ready the day of the wedding, and it’s also available to rent to stay overnight. Lars, Anne, Emily, and all of the other staff treated us like family instead of like customers. We are so thankful that we found the most beautiful wedding venue with the most wonderful owners and employees! They truly put their hearts into their work and it’s vividly reflected in everything that they do."

AH-mazing.  Thank YOU, Christina (& Travis), for your kind-kind words!  {Totally made my day!}

{5.19.13 Wedding Photos: Courtesy of Jay Phina Photography}

Hi, my name is Jodi Schaffan and my photography business is called Jay Phina Photography. I derived the name of my company by combining my parents’ favorite childhood nicknames for me. My father called me Josephina and my mother called me Jay. Family to me is one of the most important things in the world. They have always believed in my dreams, pushed me to think outside the box, and instilled in me a drive to be the best photographer I could possibly be.

I aspire to be very creative and different with my work.  I utilize unique angles, original backgrounds, a variety of props, and work with clients to make their ideas a reality. I attempt to do all I possibly can to ensure the clients needs are met and the pictures are ones they can proudly showcase for the rest of their lives.

I love wedding photography. It is exciting to be a part of one of the biggest days of a couple's life. I understand the importance of my pictures as a reminder of their special day for years to come; for that reason, I take the utmost care in photographing all of the images from my checklist. I also ask the bride and groom to write down other ideas so that I might capture those as well. Recreating the happiness and love that is expressed between two people on their wedding day and seeing it come alive in photographs is almost magical. Playing even a small role in showcasing that happiness is an amazing feeling.

My experience at Rustic Oaks was phenomenal. The venue offers an ideal location for weddings. It is an original setting, with such a variety places to go for photos that I didn’t have time for all of them! Every time I went to one spot to take a picture, another one would capture my eye. That is very rare at any one venue. I usually am required to go to parks or downtown Fargo in order to capture that much creativity. The restored barn was a gorgeous backdrop for traditional family photos and the lush, green trees and grass outside was captivating. But one of my favorite spots was the Inn. It consisted of cute bedrooms, antiques, and perfect natural lighting. It is my hope that I can book more weddings at Rustic Oaks! I would love to go back and do it all over again. The service was great, people were kind, and the experience overall was awesome!

Vendor Spotlight: {Monte's Downtown Catering}

We are so excited for the opportunity to work with a new, local caterer out at Rustic Oaks!  And we are extra excited because they are a “one-stop-affordable fine dining-shop!”  Monte’s Downtown Catering offers fine dining and full bar service and has the capability of supplying all of your china, glassware, etc.  It’s rare to find a local caterer that can do both food and bev at our site, so of course we were intrigued by this appealing option.

So far so good, right!?  Monte’s obviously looks great on paper…but how does the food measure up?

Last week I had the opportunity to experience Monte’s Catering for myself.  Christian D’Agostino (aka Chris) invited my husband and me – and the Rustic Oaks owners - to wine and dine with him at his downtown restaurant.  From start to finish, I was so incredibly impressed!!  Let me elaborate…

We were greeting by Chris at the door.  He was charming and professional, and we soon found out that he is also extremely talented!  Chris is not only the owner of the restaurant, but also the executive chef!  And the best part about that is if Monte’s caters your event, you work directly with Chris – throughout the entire process!  Anyways, let’s get to the food!!

Rack of Lamb (with Cherry Sauce) and apple cheddar bread pudding…
Braised Duck Breast (with Cranberry Chutney) and sweet potato puree…
Gnocchi (with rabbit, olives, capers, and olives) and zucchini, squash, and mushroom parmesan…

Is your mouth watering yet?!  It should be!!

Our dining experience also started off with an appetizer of shrimp and crab cakes (which were to-die-for) - and our meal ended with warm chocolate-hazelnut-creme truffle cake!

Wow.  Everything was so unbelievably delicious!  I can honestly say it was one of the (if not THE) absolute best meals I have eaten in the entire FM area!  And besides delicious, the food was beautiful; the presentation was top-notch!  I sent Chris a quick thank you message the day after we dined; it summed up our experience in one simple sentence:

“The food was delicious, you and your staff were professional and charming, and the overall dining experience exceeded my most optimistic expectations; we were impressed.”

Finally, I have to touch on the “Monte’s Dining Experience.”  When we met Chris, and tasted his food, I believe we were given much more than just a meal.  Monte’s offers a flexible fine dining experience.  And I truly think that Rustic Oaks and Monte’s Catering are a wonderful fit for each other.

To our Rustic Oaks clients (weddings, business gatherings, special events, etc.): if you are aiming to give your guests a memorable dining experience – Monte’s definitely has my stamp of approval.  They will achieve the wow factor.

And if you are interested in a free, 3-entree tasting (or more information about Monte’s Catering), contact Chris:

{A Monte’s Testimonial}

“We were so pleased with the food we tasted at Monte's; the menu choices were amazing!  Christian has been taking really good care of us throughout the planning process!  He also did a great job in helping us obtain the dishes and glassware we will need for the wedding.  (This has taken such a load off of our shoulders.)  I know the food and service will be impeccable and we cannot wait to share the experience with our family and friends!”

Today's Vendor Spotlight: Libby {Owner of Libby's Cupcakes Etc.}

To sweeten up this Monday afternoon, we get to learn more about Libby - owner of Libby's Cupcakes Etc!

I recently had the opportunity to sit down and chat with Libby, and I must say, I am very impressed with her - and her awesome little cupcake business!  She puts loads of love and care into each of her baking projects AND her products sell themselves...her cupcakes are absolutely beautiful & DE-licious!!

Libby and her business are semi-new to the FM wedding and event scene, but I know for a fact that we all will be seeing her name a lot more in this upcoming season (and years to come)...!  We are definitely excited to see her yummy displays make their way out to Rustic Oaks!  And I  encourage our couples {that are still hunting for a baker} to contact Libby; she's a super sweet person- and her goodies are lovely, very fairly priced, and personalized to your taste/event!

Lastly, you definitely need to check out the Libby's Cupcakes Etc. blog!  Her stuff is so creative and super fun to read; plus, it's full of lots of photos of her work!

{Meet Libby}

*A little about me...
Hi!  I'm Libby Martin, owner and baker of Libby's Cupcakes Etc.  I was born and raised in the the south but have called Moorhead, MN home for almost six years now.  My background is in interior design but I gave that up to be a full time Mom when my husband and I moved here.  We have two busy boys that keep life interesting.  When I'm not baking or doing what Moms do best, I enjoy...anything relaxing!

*A little about my business...
I opened Libby's Cupcakes Etc. in June of 2011.  What started as just a creative outlet quickly turned into friends asking me to bake for small events.  In the last 18 months I've done almost a dozen weddings and countless birthday parties, baby showers, graduations and everything in between.  In Janurary of this year I became a licensed baker in the City of Fargo baking out of the Square One Rental Kitchen & Event Center.  I don't know exactly what the future holds, but I am excited to see how my business will continue to grow and change!

*My typical clientele...
While I have catered to all occasions and celebrations, I really enjoy doing weddings the most.  There's something about working with brides to make sure their cupcakes and cake coordinate with the rest of their wedding style that meshes well my design background.  And it is always such an honor to be even a small part of such a big moment in two people's lives.

*What sets me apart from my competition...
Real. Butter.  Maybe it's the southern girl in me but I appreciate the thick, rich, creaminess of real butter butter cream.  I think if you're going treat yourself to a cupcake, you should really indulge!

*A current wedding trend that I'm loving...
Burlap and flowers and ruffley things.  I don't get much for girly stuff around here so when a bride comes to me with that simple, pretty style that's trending now, I gobble it up!

*What I can offer Rustic Oaks brides & grooms (and other special events clients)...
After we've met and decided on the specifics for the cake and cupcake design, I offer delivery and set up as well as cupcake/cake stand rentals. I take great care in making sure the dessert table looks fabulous.  I also work well with event coordinators that might be on site.  The goal is that once the client has set everything in motion, they can enjoy their special day hassle-free.

*The best way to see more of my work/learn more about my business...
If you'd like to see more of what I've done in the past and what's currently going on in my world, you can check out my blog or "like" Libby's Cupcakes Etc. on facebook

*The best way to contact me...
Email seems to be the most effective way of exchanging all the information weddings and other large events require.  I check email often so feel free to conatct me at libbyscupcakesetc@gmail.com

{{Thanks for taking the time to get to know more about me and Libby's Cupcakes Etc!}}

Spotlight Vendor {Kris Kandel Photography}

Today's spotlight vendor is the lovely Kris Kandel {Owner of Kris Kandel Photography}!

I recently had the opportunity to sit down with Kris and learn some more about the lady behind the lens.  We met downtown for coffee...and I have to say, if my car hadn't been parked in 90 minute parking, I could have sat and chatted with Kris all day!

When I walked into Moxie, I was greeted by Kris and her kind, welcoming smile!  (I thought to myself, I like her already!)  While sipping on coffee, we talked and talked!  The coolest part, we talked mostly about ourselves - as people - and we saved "business talk" for last.  I felt like I really got to know "Kris" first - and I totally loved her - so that made me want to know more about her business, photography, and art!

A few really lovely things I learned: Kris loves to travel (and loves the people, the food, the different cultures, and the new perspectives that are experienced while traveling), she loves her family, loves coffee (and frequenting coffee shops), and loves LOVE!  Kris only shoots weddings and engagements; how cool is that?!  She has done a variety of photography for many years... but made weddings her specialty/focus/and priority!

For any Rustic Oaks couples who have not booked their photographer - I would totally recommend setting up a coffee date with Kris!  (But be prepared to want to sit and chat and admire her work for hours; make sure to find a parking spot without a time restriction!)

*A little about me...
Hi I'm Kris Kandel, I love looking at the magical beauty and creativity surrounding us! Everything from traveling the world and listening to different languages, to throwing a ball for my dog on a hot summer day. Life is full of interesting details, and that's why I love being a photographer! It allows me to get to know couples and interact with unique moments in people's lives! How cool is that?!
*A little about my business...
I specialize 100% in weddings because I love working with couples, the way you look at each other is simply the best thing ever! I've been photographing weddings for 12 years, 9 as my own business, and 5 in the Fargo area.
*My typical clientele...
I tend to attract couples who are confident and relaxed. People who are excited about their wedding day, but not stressed out about it. Brides who love DIY details, and wear cute colorful or sparkly shoes! The type of person who shops at Trader Joes, mixes Forever 21 with thrift store treasures, and loves to dream.
*What sets me apart from my competition...
My main goal is to help serve you on your wedding day - to help things run smoothly, to make sure you have a relaxed and fun time, and to feel like you are spending the day with a friend (me)! You will spend more time with your photographer than anyone else on your wedding day, so be sure to find someone YOU connect well with!
*A current wedding trend that I'm loving...
The #1 thing I notice about brides is they are often uncomfortable in their dresses after a few hours; the new trends look much more comfortable and (dare I say it) more romantic. Cute floor length dresses with lace collars or flowing over the shoulder sleeves. Etsy and Anthropologie's BHLDN collections are great places to find trendy, flowing, vintage inspired gowns!
 *My experience(s) working at Rustic Oaks...
Rustic Oaks has been such a great place to work with! The staff and people on site are always helpful, making sure everyone is comfortable and have what they need (plus everything is kept so neat and clean - definitely not something I see at a lot of venues!). The land and property are so beautiful to work with as well! I mean, seriously, you can't go wrong with the prairies, rustic barn, and scenery on every side.
*The best way to see more of my work/learn more about my business /contact me...
I keep my website updated with my latest work and fun galleries - www.kriskandel.com so check it out and contact me to see if your wedding date is still available!  You can also email me: Kris@kriskandel.com for more info!

Lush Lola's

{Today on the blog: Shannon Malzahn - owner of Lush Lola's!}

Now licensed at Square One Kitchen Rental & Event CenterLush Lola's is a catering business specializing in whole hog roasts and beer-braised meats!  Their motto: "Food Done Fun!"  They have a line of beer-braised meat recipes with fun names like the Drunken Pig, Tipsy Cow, and Wobbly Chicken; they also offer fun and interactive menu items like whole hog roasts (complete with fruit garnish and a carving station), shrimp boils, pitchfork fondue, and more!  And because they almost always cook with alcoholic beverages, it really is BBQ with a twist!

I recently had the opportunity to meet Shannon, chat about Lush Lola's, AND sample their yummy-yummy food.  Overall, I am impressed!  The food: delicious and fun; Shannon: a fabulous woman - with a passion for catering and a strong drive for success!  I have no doubt that Lush Lola's will be a great fit out at Rustic Oaks and I look forward to having Shannon cater at our site!  Welcome to FM, Lush Lola's!  We are happy to have you serving our community your "Food Done Fun!"

{Pictured Below: Shannon & Fam!  ...How awesome is this photo!?}

*A little about me...

Hi!  I'm Shannon Malzahn, owner and Event Coordinator for Lush Lola’s- I have been serving food to large crowds at festive gatherings since I was a teenager.  My mom has a concession business that started out at little festivals and county fairs all over Minnesota; it's now in its 18th year at the Minnesota State Fair!  I have been managing her stand since the beginning.

A few years ago, myself and my husband Jim opened our own food business, with recipes I created, at select events.  Once we put the “Drunken Pig Sandwich” (a beer-braised pulled pork topped with their own Captain Morgan BBQ sauce) on the menu, the whole business blossomed!  Now we not only go to public events like WE Fest and the Little Falls Craft Fair, but cater private events throughout the Lakes Area and Fargo/Moorhead as well.

*A little about my business...

Lush Lola’s has a whole line of fun beer-braised meat options, including the Drunken Pig, Tipsy Cow and Wobbly Chicken.  We love to cook with alcohol because of the extra flavor and festivity it adds to our “spirited cuisine”! We’ve been known to try bourbon and rum in almost any dish that sounds like it could use a little something “extra”!  We recently added whole hog roasts (complete with fruit garnish and carving station), shrimp boils (in beer!), and pitchfork fondue because not only are they delicious, but are a good complement to the sauces and seasonings we have created as well as our sense of fun.  We are perfect for clients that are looking for a unique and fun catering option for their event.  Our custom menu and fun attitude really sets us apart from other caterers.  We are also family-owned and run, so myself and/or my husband is at every event with our primary goals to make an event fun, affordable, stress-free, and memorable for our clients as well as their guests.   We are incredibly flexible and customer-focused so we love to work with adventurous clients who have fun, creative ideas for their event as well as those that may need a little extra guidance or reassurance.
*A current wedding trend that I'm loving...

Although we don’t do a lot of desserts, one of our favorite wedding trends right now is offering a “dessert buffet” instead of or in addition to a traditional wedding cake.  It is fun to offer guests all sorts of sweet goodies to munch on throughout the reception!

*Why my business is a great fit for Rustic Oaks...

Because of our menu and what we do, we love the setting and style of Rustic Oaks!  Who wouldn’t think that a traditional hog roast or pitchfork fondue at a historic barn is a great idea?!  And while we can be kitschy for those that like the idea of a full western theme (we’ll even dress up in “costumes” if you want!), we can also provide elegant menu and serving options.

*The best way to learn more and/or contact me...

You can check out our website at www.lushlolas.com or join us on Facebook at www.facebook.com/lushlolas for more information.  We are also always happy to talk to potential clients by email or phone.  Our email address is lushlolas@gmail.com or you can talk to Shannon, Owner/Event Coordinator at (218) 234-2712.
